granola

I love homemade granola! I eat it for breakfast, a mid-day snack or even a late night snack (it's got to be better than ice cream or cookies, right?).

In the fall I have made pumpkin spice granola and it's delicious but for the rest of the year I prefer this granola recipe. It is so yummy. It is packed with healthy things: oats, wheat germ, whole wheat flour (freshly ground with my fancy wheat grinder!), almonds and pecans. It is sweetened only with honey. I like to eat mine with dried cranberries and milk. The recipe makes a ton- I actually have to stir it together in a giant stock pot because I don't have a bowl large enough- but it is so good that we ate the last batch in less than two weeks!

Yum - I love granola too! Pumpkin Spice granola sounds so good. I'll have to remember that one in the fall.

When I make granola I use some of it to make granola bars with chocolate chips (chunks are better, but only when they are on sale). My kids love them. I use a recipe in my Better Homes and Garden cookbook. There is probably a better one out there, mine are like thick brownies.

I've never made home made granola, but I bet it's wonderful. What type of wheat grinder do you have? I've been meaning to get one, but never know which kind to buy. Do you like yours?

This is the BEST granola (in my humble opinion) because it's so low in fat and I get to use maple syrup, which I LOVE! I originally got it from the blog, Cookie Madness (http://www.cookiemadness.net/2008/09/great-granola/)

I took out the nuts, which I do miss, but then young kids can have it also. My daughter loves it!

Great Healthy Granola

Ingredients

2 cups old fashioned oats
1/2 cup wheat germ
2 tablespoons brown sugar
1/4 teaspoon salt
pinch cinnamon
1/4 cup maple syrup
3 tablespoons oil
1 tablespoon water (plus a little extra if needed)
1 teaspoon vanilla

handful of dried cherries, cranberries or raisins when it's done baking

Preheat oven to 275 degrees F. Grease a 13×9 inch baking pan (metal).

Mix oats, wheat germ, brown sugar, cinnamon and salt together in a big bowl. Stir in the pecans.

Combine syrup, oil and water in a microwave-safe glass measuring cup. Microwave for about 1 minute or until mixture boils. Stir in the vanilla, then pour over oat mixture and stir very well. Mixture should seem slightly moist and you should be able to form clumps by pressing it together with your fingers. If it is too dry to do this, add a little more water. You can also add a little more water if you like more clumps.

Transfer the oat mixture to the baking pan and using your fingers, squeeze together as many clumps/clusters as you like.

Bake the granola for about 45-50 minutes, stirring every 15 minutes to avoid burning. It should be golden and should not smell burnt (timing granola is kind of an art) Granola will come out of the oven kind of soft, but will crisp as it cools.

This makes a small batch of granola and I always want more, so I’d suggest doubling it.

how long have you owned a wheat grinder? I've been looking to buy one, maybe I'll test drive yours first. This granola looks great. Save some out of the next batch for me so I can try it - I'm sure it's delicious.
