
The last week's weather has been amazing! In the mornings the temperature is in the high 60's or low 70's and the humidity has been lower too. I open the windows every morning and relish in the beginnings of Fall.
This morning I was craving pumpkin pancakes. If you have read my blog for awhile you will already know about my pumpkin obsession that my family politely puts up with. Alas, when I went to the pantry I realized that I had no canned pumpkin. Time to improvise! Inspired by our plans to go apple picking next Saturday I thought, "apple cinnamon pancakes". I used Bisquick so they were super easy and quick.
apple cinnamon pancakes
2 cups Bisquick mix
1 tsp cinnamon
1/2 tsp nutmeg
2 eggs
1 cup apple sauce (I used Mott's Natural with no sugar added)
1/2 cup milk
1/4 cup melted butter
1 tsp lemon juice
Combine dry ingredients. Add all other ingredients, stirring until moistened. Don't over mix. Using a 1/4 cup measurement pour onto hot griddle and cook until brown on both sides. Serve with maple syrup.

I love every thing about you....Not in a creepy stalker-esqe kind of a way. More of a "she's just too darn patootin' cute kind of a way." Mostly, I just wanted to thank you for being you. I hope you pinch yourself a little each morning just to make sure you're real. Thank you for "filling" my cup with such goodness with each post you share.
